I download my statements off the web and then import them
into Money.

However, I'd rather not manually categorize the payee
"Starbucks 00002022 Chicago I" to "Food" everytime.
Can I get Money to automatically categorize a payee in a
category?

In Tools->Options->Online Services->ShowStandardizedPayeeNames
Change the existing Starbucks entries to "Starbucks" on
Accounts&Bills->Categories&Payees->Payees using the Move button.
Money should classify the entries as "Starbucks", and learn that
"Starbucks" implies food.
